How can I tell what type of USB controller I have?

Use the lspci -vt command. To know more about lspci, look in the man (manual) pages: man lspci.

Does my chipset tell me anything about my USB?

If you have an Intel or VIA then your USB is a usb-uhci, or universal.
If you have a Compaq, Apple (iMac, G3, G4, G4 Cube, and iBooks); and OPTi, SIS, or ALi chipset, then your USB is a usb-ohci, or open.
